If you are a paleo dieter who loves pancakes, then you must have been faced with the problem of flipping them. Well, no such problem with this recipe. Go ahead and make these paleo pancakes and enjoy a pancake without making a mess in your kitchen.
2 large green plantains (about 2 cups pureed)
2 teaspoons vanilla
½ teaspoon baking soda
A pinch of salt (a generous pinch)
3 tablespoons extra virgin coconut oil
Extra coconut oil for frying
First things first you have to peel the plantains (you might find it easier to quarter them prior to peeling them) then go ahead and put the pieces in a blender or food processor together with the eggs. Blend them to form a smooth and even batter. Proceed to adding the rest of the ingredients to the blender and process on high for an additional minute. Heat a frying pan or a griddle over medium-high heat and pour a tablespoon of coconut oil. Using a ladle pour batter into the frying pan. Let it cook 4-5 minutes on one side, until bubbles appear (just like with regular pancakes!). Using a turner, flip the pancake and cook on the other side for 1-2minutes. Repeat the process until you’ve no batter left, adding a little more coconut oil to your pan as needed.
