Usually the first fruit that comes to mind during this season is pumpkin or even apple, but we often forget about another delicious, totally season-appropriate fruit: pear. Pears bring fresh and sweet taste to these fluffy pancakes and pair perfectly with cinnamon. The best part is that these pancakes are healthy because of the whole wheat flour and flaxseed inside. 1 cup milk
1/2 teaspoon vanilla extract
2 small pears
1 cup whole wheat flour
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1 tablespoon brown sugar
1 tablespoon flaxseed
Heat a frying pan over medium-low heat, grease it with butter and add one chopped pear with some brown sugar to saute it.
Whisk the dry ingredients: flour, baking powder, flaxseed, sugar and cinnamon. In another bowl mix the egg, milk and vanilla. Pour the milk mix into the flour mix. Stir until combined. Chop the other pear and add it into the batter.
Heat a griddle on medium-low heat and pour ¼ cup batter per pancake onto it. Cook for about 2-3 minutes. Turn and cook for another 1-2 minutes.
Top the pancakes with the sauted pears and sift some cinnamon over them.
