Low-Calorie Pancakes Recipe

Eat pancakes and lose weight. You think it’s a fantasy? No, it is true. These soft pancakes have no refined flour and sugar inside. Instead they are made with almond flour, but you can choose whole wheat flour, oat flour, soy flour or coconut flour as well. Also, they are very quick to prepare because all the ingredients are mixed in a blender in no time. Extra tip: use coconut oil for greasing the pan instead of vegetable oil. Sweeten them additionally by serving with honey and fruit slices or add some honey in the batter.

  • ½ cup almond flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • 3 eggs
  • ½ cup cottage cheese
  • coconut oil for the pan

Place all the ingredients in a blender and mix for about 30 seconds. Make sure all the ingredients are well blended and foamy.

Heat a non-sticking pan over medium-high heat. Grease it with coconut oil.

Pour ¼ cup measure per pancake onto the warm pan. Cook until the surface of the pancake bubbles up. Flip and cook the other side for 1-2 minutes more until golden brown.
