Home-Made Eggnog Pancakes Recipe

These pancakes contain home-made eggnog. I like my pancakes home-made from scratch. Eggnog can be alcoholic, as you know, but since these are pancakes we are talking about, and pancakes are every kid’s favorite breakfast, I choose the alcohol-free variant. If you want the alcoholic alternative use the same eggnog recipe adding plus 3 oz. bourbon. The secret ingredient inside? Nutmeg. These thick and fluffy pancakes are just perfect for chilly fall and winter weekends. So grab a stack, sit by the fireplace and watch the rain through the window.

Ingredients for eggnog

  • 4 egg yolks
  • 4 egg whites
  • 1/3 cup sugar
  • 2 cups milk
  • 1 cup heavy cream
  • 1 teaspoon grated nutmeg

Ingredients for pancakes

  • 2 cups flour
  • 4 tsp baking powder
  • ½ tsp salt
  • ½ tsp ground nutmeg
  • 2 cups eggnog
  • 2 large eggs
  • 3 tbsp butter
  • ½ tsp rum extract

Instructions for eggnog

Place the egg yolks in a bowl and beat with an electric mixer until light creamy. Add the sugar and continue to beat until it is completely dissolved. Add the milk, cream and nutmeg and stir to combine.

Place the egg whites in the bowl and beat with the mixer. Add 1 tbsp sugar and keep beating until creamy. Add the egg whites into the egg yolks mix. Stir well.

Instructions for pancakes

In a mixing bowl, whisk the flour, baking powder, salt and nutmeg.

In a separate mixing bowl, whisk the eggnog, eggs, butter and rum. Pour the wet mixture into the dry mixture and whisk until combined but slightly lumpy. Pour about a ¼ cup onto previously greased and heated skillet.

Cook until light brown. Flip the pancake and keep cooking for another 1-2 minutes.

Serve with butter and maple syrup.
