Of late I’ve been paying more and more attention to my overall well-being. This includes waking up early, going for a morning jog, and of course eating a healthy breakfast. Since I definitely love pancakes I came up with this healthy pancake recipe. So if you are looking for a healthier version of the regular pancake that will be just as tasty, this recipe is the answer to your prayers. With only 25 minutes to spare, you will have a yummy healthy plate of pancakes.
- 1 cup whole wheat flour
- 1 cup milk
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- 1 tablespoon vinegar (apple cider)
- 2 teaspoons sugar
- Pinch of salt
- An egg
- 2 tablespoons melted butter
- Butter for greasing the griddle
Mix milk and vinegar and let the combination curdle. In a separate bowl, whisk the whole wheat flour, baking powder, baking soda, salt and sugar. In yet another bowl, add the egg, melted butter and the curdled milk, whisk them together until you get a relatively smooth batter. Add this wet mixture into the dry constituents and stir them together until just merely mixed. You will need some lumps if you want your pancakes to be fluffy. Preheat a nonstick griddle to 370 degrees F and grease it with butter. Use a small scoop to form the pancakes and cook until golden brown on both sides.
