Easy Spaghetti Pancake

If you wonder what to do with leftover spaghetti, here is the answer. Sometimes kids eat the whole spaghetti batch you had prepared for the day, but sometimes they leave a lot of spaghetti behind. Now, you can heat the leftover spaghetti and prepare some sauce to go with them or make a pasta salad, but I am sure you’ve done it all. So let’s try something new. One big pancake to feed a hungry crowd of four. This recipe yields one large pancake but you can divide the batter into smaller batches and cook one at the time.


3 cups cooked spaghetti

4 eggs

1-2 tsp salt

½ tsp ground black pepper


optional: bacon, cheese, diced vegetables, onion, garlic, various spices (e.g. basil) to taste.


(If you don’t have leftover spaghetti, prepare them in the usual manner).

Beat the eggs in a large bowl until smooth. Add the spaghetti and mix well. Add the salt and pepper and anything else you’d like. I added some bacon slices and cottage cheese with a clove of garlic and some basil.

Heat the frying pan greased richly with oil or butter. Pour the spaghetti mixture into the warm pan. Cook until the bottom is golden brown. Carefully turn the pancake and keep cooking until the other side is golden brown as well.

Place it into a plate and cut in wedges.
