I love cornmeal, and I love pancakes so I was thrilled at the prospect of trying a recipe that included both. It is a great combination of healthy and sweet. What’s more, these tasty pancakes are as simple as ABC, and will take up 30 minutes tops. All the more reason to try them ASAP!
- 2 large eggs
- 2/3 cup cornmeal
- 1-1/3 cups all-purpose flour
- 4 teaspoons baking powder
- 2 tablespoons sugar (regular or brown)
- 1 teaspoon salt
- 1-1/3 cups 2% milk
- ¼ cup canola oil
- Pancake syrup
Combine the flour, baking powder, cornmeal, sugar and salt. In a separate bowl whisk the milk, eggs, and canola oil. Pour these into the dry ingredients and stir until dry ingredients are moistened. On a hot greased griddle pour ¼ cupfuls of batter and turn as soon as bubbles start to appear. Repeat the same process with the rest of the batter.
You can serve these babies with some maple syrup or butter.
