- 1 cup flour
- 1 cup ricotta cheese
- 1 teaspoon baking powder
- 1/2 cup sugar
- pinch salt
- 3/4 cup milk
- 1 egg
- 1 Tablespoon lemon juice or lemon zest
- 1 teaspoon vanilla extract
Place the flour, baking powder, sugar and salt in a large mixing bowl and whisk everything together. Add the ricotta cheese and combine everything together.
Pour the milk, egg, vanilla extract and lemon juice or zest into another bowl and whisk them together.
Pour the wet ingredients into the dry ingredients. Mix until just incorporated.
Heat and grease a skillet over medium heat. Pour a ¼ cup of the pancake batter for each pancake onto the skillet. Cook until bubbles appear on the surface. Flip and cook the other side for another 30 seconds.
Serve with maple syrup and fresh berries.
