The classic American pancakes are made from flour, eggs, milk and baking powder (for fluffiness). If you want a healthier variation of the classic recipe use whole wheat flour or oatmeal. The best thing about the classic recipe is that you can add anything to the mixture, from fruits, like berries, to chocolate chips, and have a fresh new mixture every time you make it. These pancakes will be ready in no time, with just 5 minutes needed to prepare them and another 10-15 minutes to cook.
2 cups flour
1-2 cups milk
2 teaspoons baking powder
pinch of salt
1 tablespoon sugar
2 tablespoons melted butter (optional)
In a large bowl mix together the flour, baking powder, sugar and salt. In another bowl beat the eggs, milk and melted butter. Make a well in the center of the dry ingredients mixture and add the wet ingredients stirring gently. Mix until the mixture becomes smooth.
Heat a griddle or a skillet on a medium high heat. Slightly grease it with oil or butter. Scoop or pour the pancake mixture into the griddle. Use about 1/4 cup for one pancake, depending on the size you desire.
Cook the pancakes until brown, about 3 minutes. Serve them hot.
