Cheer to the cherries! If you like cherries as much as I do you will adore this pancake recipe. Stir fresh cherries into your favorite pancake batter and create a fresh and delicious breakfast treat. There is one extra secret ingredient I use: just a little bit of cherry brandy insid
e the batter for a surprising twist. Sometimes I also add
a handful of chocolate chips, just for fun. They are delicious and all thick and fluffy. Note: if you don’t have fresh cherries just use frozen ones. Serve with butter and maple syrup and some extra cherries on top.
2 cups all-purpose flour
½ teaspoon salt
3 tablespoons sugar
2 teaspoons baking powder
½ teaspoon baking soda
2 cups milk
3 tablespoons butter
2 cups cherries
1 tablespoon cherry brandy (optional)
1 cup chocolate chips (optional)
In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the milk, egg, butter, cherry brandy and chocolate chips.
Pour the wet ingredients into the dry ingredients and add the chopped cherries. Stir until just combined. Don’t over-mix, the batter should be lumpy.
Heat a large griddle over medium-low heat. Grease and pour ¼ cup batter onto the griddle. Cook until the surface bubbles and the bottom is light brown. Turn and cook the other side for 1-2 minutes more.
