Banana and Raspberry Small Pancakes


Good things come into small packages. Yes they do, and this recipe will prove that! The tasty raspberry pancakes transformed into a smaller bite-size pikelet will leave even the most sophisticated of palates, speechless.

1 cup self-rising flour

1 tablespoon caster sugar

1 teaspoon baking powder

1 egg, lightly beaten

¾ cup milk

2 large bananas, mashed

Oil for the non stick pan

1 cup frozen raspberries


In a large bowl sift the flour and the baking powder and stir the sugar in. Create a well in the centre. In a separate bowl whisk the milk and egg, and proceed to adding the banana in. Stir everything together until combined. Add the milk mixture into the well. Stir with a wooden spoon to blend everything together. Heat a non stick frying pan over medium heat and oil it. Form the pikelets using 1 tablespoon of batter at a time, and cook for a minute, or until pikelets have just set. Gently drop 3 raspberries on each pikelet. Cook for an additional minute or until the edges are dry. Carefully flip. Cook for 1 or 2 extra minutes or until through. Repeat the process until you’ve run out of batter (it should be enough for 20 pikelets). Serve.
